From Emily Buehler, our Website Coordinator. Emily says, “This recipe is for those of us who love noodles, but aren’t crazy about the spice sacks that come with Ramen packs. When I first bought the Lotus Foods multi-pack, I was confused to find only noodles inside. But it turned into a bonus, because it led me to make this soup.” Lotus Foods Rice Ramen noodles come in flavors like “millet and brown rice” and are delicious, and Better Than Bouillon is out-of-this-world good. This recipe serves one person but is very flexible.
Ingredients:
- 1 cup water (or scale up accordingly if you like more broth)
- 1 tsp Better Than Bouillon concentrated soup mix
- 1 brick of noodles (comes in a 4-pack from Lotus Foods)
- 3 cloves garlic
- green onions or other garnishes (optional)
Directions:
1. Heat water on high in a small pot.
2. Slice garlic into water.
3. When water boils, add noodles and bouillon and stir. Cook, stirring a few times, until the noodles are soft.
4. Add green onions or other additions as appropriate. (I’d add green onions with the noodles, to allow them to soften.)
